Ooey Gooey Vegan Chocolate Banana Bread

Ingredients
  

1 2/3 cup overripe mashed red banana
  • 2 1/2 tsp pure vanilla extract
  • 1/2 cup canned coconut milk
  • 3 1/2 tbsp melted coconut butter OR 2 tbsp milk of choice
  • 2/3 cup of raw manuka honey or agave
  • 1/4 cup coconut sugar OR raw manuka honey or agave
  • 1 3/4 cup spelt flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 3/4 tsp aluminum-free baking powder
  • 1/2 cup plus 2 tbsp raw organic cocoa powder
  • 1/2 cup mini chocolate chips in the batter plus regular chips for decoration, optional

Method
 

Measure banana after mashing, not before. Be sure it's mashed well.
    Preheat oven to 350 F and grease a 9×5 loaf pan very well, going up the sides.
    1. In a large mixing bowl, combine together all the ingredients from banana to the sugar or additional sweetener (the first 6 ingredients).
    2. In a separate bowl, combine all the remaining ingredients and stir very well, making sure there are no lumps from the flour
    3. Pour the dry ingredients into wet ingredients, and stir until just evenly combined. Do Not Over mix.
    4. Transfer the batter to the loaf pan and spread out evenly. If you want, sprinkle some chocolate chips over the top of the banana bread and press down.
    5. Bake 35 minutes. Then turn off the oven but DON’T open the door! Let it sit 10 additional minutes in the closed oven before removing and slicing.
    6. This banana bread tastes even sweeter the next day, and it freezes well after slicing.

    Notes

    A chocolatey & extra moist homemade chocolate banana bread that you can eat for breakfast or dessert! Feel free to mix up the recipe however you like: with nuts, shredded coconut, or even minus the chocolate chips. I personally love mine with a glass of my homemade walnut milk and/or a la mode with some of my delicious homemade healthy ice-cream! Enjoy!
